This page describes the decaffeination process of coffee through four processes, the growth process of organic and shade grown coffees, how the harmony and balance of Java-Roaster's blended coffees are achieved, along with Java-Roasters' flavored coffees and dark roasts.

Brews & Blends:
The decaffeination process of coffee involves soaking green or unroasted coffee beans in hot water to open the pores and facilitate the removal of the caffeine.

After water soaking there are four processes for removing the caffeine from coffee:

  1. Methyl Chloride Solvent - This process is inexpensive and very selective in what it removes from the beans.
  2. Ethyl Acetate Solvent - This process is almost the same as Methyl Chloride.
  3. Swiss Water Process - This process used activated charcoal to remove caffeine, but also removes much of the flavor components as well. This method is a little more inexpensive than the direct or solvent processes.
  4. CO2 - Uses Carbon Dioxide under high pressure and retains much of the flavor of the original bean. This method is very expensive and not widely used for coffees.

About 99% of the caffeine is removed regardless of the process and unfortunately, flavor and aroma are also diminished.

Organic coffees are grown without the use of the chemical pesticides and fertilizers on small, family owned farms and shade-grown coffees are grown under diversified shade cover, the natural habitat of hundreds of species of migratory song birds. These bird populations act as a natural defense against many of the bugs and pests that can ruin a coffee crop.

We carefully select coffees from the different growing regions for their individual characteristics (Aroma, body, acidity, and flavor), then artfully combine them to achieve a taste that is more complex than any individual single origin or estate coffee. It is the harmony and balance achieved in the cup that makes Java-Roasters' blends a favorite of many of our customers. When blending our coffees, unless a specific recipe calls for it, we roast each coffee prior to blending to maintain each coffee's unique contribution to the blend.

All of our flavored coffees start with the finest high-grown Mexican coffees available (usually Altura Plumas). To these coffees we add just the right amount of flavoring extracts to create an unusual but subtle coffee experience; the perfect no calorie, non-alcoholic dessert. Try adding cream for flavor enhancement.

At Java-Roasters, our dark roasts are blends of single origin coffees selected for their unique ability to mature in flavor and aroma under dark roast conditions. The prolonged exposure to the heat of roasting releases the volatile flavor oils of the coffees and imparts deeper, smokier flavors, with a hint of caramel sweetness. These flavors are exhibited in our dark roast blends, Italian (darkest), French Roast (dark).
